You can swap out the granola with your choice of nuts or chocolate chips. You can replace almond milk with your choice of milk.
Vegan Banana Bread with Dried Fruit and Nuts Granola

Ingredients
- 3 medium ripe bananas, mashed
- 3 tsp apple cider vinegar
- 1/2 cup vegetable oil
- 4 tbsp non-dairy milk (such as almond, rice, oat or soy milk)
- 2 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 2/3 cup almond flour
- 3/4 cup sugar
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 3/4 tsp ground cinnamon
- pinch of ground nutmeg
- ~3/4 cup of dried fruit and nuts granola
Directions
- Preheat oven to 355 ºF and line a loaf baking tin with parchment paper.
- In a large bowl, mix together the wet ingredients: mashed bananas, apple cider vinegar, vegetable oil, vanilla extract, and non-dairy milk.
- In another bowl sift together the dry ingredients: all-purpose flour, almond flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add the dry to the wet ingredients, and whisk or stir well until you get a smooth batter with no flour clumps.
- Add the granola and mix until they’re evenly distributed.
- Transfer the batter into the lined loaf tin and bake for about 60 minutes, or until well risen, golden brown on top and an inserted toothpick comes out clean.
- Once baked, allow it to cool in the tin for 5 – 10 minutes, then remove out of the tin and allow to cool completely on a wire cooling rack. 8.Storage: The vegan banana bread keeps well in a closed container in a cool dry place for 3 – 4 days.
