Vegan Omelette

I finally found a recipe that is perfect to make a vegan omelette. Feel free to add or substitute any vegetables of your choice. If you don’t want to make it vegan, just use regular milk in the omelette batter mixture.

Ingredients

    Filling:
  • 2 slices of Paneer (cottage cheese)
  • 2 tbsp Onion, chopped
  • 1/2 tsp Garlic, chopped
  • 1/2 Tomato, chopped
  • 1/2 cup Broccoli florets
  • Jalapenos, per taste
  • Handful of spinach
  • Omelette Batter:
  • 1 cup Chickpea flour
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/4 tsp turmeric
  • Soy milk, as needed to bind the mixture

Directions

1. In a pan over medium heat, add 2 tbsp of olive oil and toss in onion and garlic; cook for 2-3 mins.
2. Add in tomatoes, broccoli, and jalapenos; cook for 2-3 mins.
3. Mix in the spinach and turn off the heat.
4. In a non-stick pan over medium heat, add butter to cover the base and pour half of the omelet batter.
5. Once cooked, place the vegetable filling mixture on one half and fold over the other.
6. Optional, top the mixture with cheese.
7. Serve.
