Healthy Banana Pancakes

You can switch it up by adding superfoods to the recipe; here I have added 1 tsp of Acai Powder.

Healthy Banana Pancakes

Healthy and vegan banana pancakes reciepe to kick start your day.

Ingredients

  • 2 Bananas
  • 1 1/4 cups Rice Flour
  • 1/2 cup Coconut, grated
  • 1/4 tsp Nutmeg
  • 1 tsp Baking Powder
  • Cardamom Powder, a pinch
  • 1/2 cup Brown Sugar
  • 1 1/2 cups Water, boiling
  • Ghee or Melted Butted, for cooking
  • Fruit for garnish
  • Honey or Maple Syrup, as an accompaniment

Directions

  1. In a microwave-safe bowl, bring the water to a bowl and then mix in the brown sugar until it’s dissolved in the water.
  2. In a bowl, mix together all of the rest of the ingredients and slowly add the brown sugar mixture.
  3. Over medium heat, coat the non-stick pan with ghee, or melted butter then add 3 tbsp of the mixture and add a few drops of ghee on the top part of the pancake mixture.
  4. After 2-3 mins, flip the pancake and cook the other side; repeat until the pancake mixture is finished.
  5. Garnish​ with fruits of your choice and serve with honey or maple syrup.
