Avocado & Tomato Quesadilla

Avocados are cheap again! Here is a quick, easy, and healthy avocado & tomato quesadilla recipe. You can make it for lunch or an afternoon snack. It can be turned vegan by using vegan cheese or using no cheese at all.

Prep and Cook Time: 10 Mins

Ingredients:

  • 1/2 Avocado (chopped)
  • 1/2 Tomato (chopped)
  • 1 Wrap
  • Shredded Cheese or Vegan Cheese (to your desire)
  • Black Pepper (to taste)
  • Oregano (to taste)

Instructions:

In your choice of wrap, place the chopped avocado and tomato on one half of the wrap. Top it off with your choice of shredded cheese, black pepper, and oregano. Cover the toppings with the other half of the wrap. On a stovetop, heat a non-stick pan on medium heat. Place the folded wrap and cook each side for 1-2 mins each. Enjoy with your choice of homemade or canned salsa along with Tapatio hot sauce.
