A cold day like today called for some warm soup. A quick, easy and hearty soup recipe will help you stay warm during the cold winter. I decided to make my version of the wonton soup with the ingredients I had in my pantry. The best part is that it is vegetarian, vegan and only took me 15 minutes to make.
I used Trader Joe’s Thai Vegetable Gyoza instead of wontons. I also replaced bok choy with baby spinach. I even tossed in some green chili to the broth for some spiciness. Give it a try and customize it as you like.
Vegetarian Wonton Soup

Ingredients
- Trader Joe’s Vegetable Broth
- Trader’s Joe’s Thai Vegetable Gyoza, 6
- 2 tbsp soy sauce
- 1/4 cup green onions
- 4-5 slices of ginger
- 1/2 tsp chopped garlic
- a handful of spinach
- 1 green chili, optional
Directions
- On medium heat, bring to boil vegetable broth, soy sauce, garlic, ginger, green onions, and green chili. Remove the ingredients after the soup comes to boil.
- Cook vegetable gyoza per instructions, I used 3 per serving.
- Steam the spinach.
- In a soup bowl, place the gyoza and steamed spinach, pour in the soup and serve.
