Vegan Beet Burgers! Quick and easy recipe for a hearty veggie burger with a perfect bite. The burger is egg-free, dairy-free, vegetarian. This recipe was inspired by one of my favorite vegan burgers at Northstar Cafe.

You can serve them in a burger bun or swap it out with a salad. I toasted up some seasoned potato wedges the first time. I made some regular and sweet potato fries the second time around.

They can be stored in the fridge for a week.
Easy Vegan Beet Burgers

Ingredients
- 3 Beets
- 1/2 cup brown rice
- 1/2 can black beans
- 1/4 tsp cayenne pepper
- 2 tsp barbeque sauce
- salt, black pepper, garlic powder to taste
Directions
- Preheat oven to 375.
- Boil the chunks of beets in lighted salted water for 10 mins.
- Cook the brown rice (I like to pre-soak them for about 30 mins prior to cooking, it cooks the rice faster).
- Mix together the beets, rice, black beans, barbeque sauce and spices.
- Shape the mixture in burger and bake for 20 mins.
