Beet Burgers (Vegan)

Vegan Beet Burgers! Quick and easy recipe for a hearty veggie burger with a perfect bite. The burger is egg-free, dairy-free, vegetarian. This recipe was inspired by one of my favorite vegan burgers at Northstar Cafe.

You can serve them in a burger bun or swap it out with a salad. I toasted up some seasoned potato wedges the first time. I made some regular and sweet potato fries the second time around. 

They can be stored in the fridge for a week.

Easy Vegan Beet Burgers

Ingredients

  • 3 Beets
  • 1/2 cup brown rice
  • 1/2 can black beans
  • 1/4 tsp cayenne pepper
  • 2 tsp barbeque sauce
  • salt, black pepper, garlic powder to taste

Directions

  1. Preheat oven to 375.
  2. Boil the chunks of beets in lighted salted water for 10 mins.
  3. Cook the brown rice (I like to pre-soak them for about 30 mins prior to cooking, it cooks the rice faster).
  4. Mix together the beets, rice, black beans, barbeque sauce and spices.
  5. Shape the mixture in burger and bake for 20 mins.
