Vegan Blueberry Açaí Muffins

A vegan blueberry muffin recipe perfect for breakfast on the go. It super easy to make and you can keep in the refrigerator for a few days. They pair perfectly with your morning coffee or tea.

You can replace coconut milk with your choice of non-dairy milk. You can also replace almond flour with the flour of your choice.

Vegan Blueberry Muffins

Ingredients

  • 2 cups Almond Flour
  • 1 cup Coconut Milk
  • 1/3 cup Vegan Butter
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • 1 tsp Acai Powder
  • 1/3 cup Honey
  • 1/4 cup Hemp Hearts
  • 1/2 cup Blueberries, fold in

Directions

  1. Preheat oven at 375°F and line a cupcake tray with cupcake liners.
  2. In a bowl, mix all of the ingredients and fold in blueberries at the end.
  3. Bake for 25 – 30 mins.
