How to Make Phirni

Kesar da Dhaba, in Amritsar, is famous for it’s signature dish Dal makhani. They are also known for the creamy Phirni served in earthen bowls. I had Phirni here for the first time on my recent trip to India. Phirni was one of the best desi desserts I ever had. 

Phirni at Kesar da Dhaba

Phirni  or Firni is similar to Kher and takes less time to cook and it is served cold. I was inspired by the simple and easy recipe by Chef Kunal Kapur. Today, I gave it a try and made my own version of the dish.

Prep and Cook Time: 2 Hours

Ingredients:

  • 1/4 cup soaked rice
  • 2 cups of milk
  • 5 tbsp sugar
  • Saffron
  • Pistachio (powder and chunks)

Recipe

  1. Soak rice for at least an hour.
  2. In a blender, mix the rice with 1 cup of milk.
  3. In a pan on medium heat, add the rice and milk mixture along with remaining 1 cup of milk and sugar.
  4. While constantly stirring the mixture, add saffron and powdered pistachio;  continue to stir the mixture until it becomes thick.
  5. Pour the mixture in small bowls and put in the freezer for 30 mins. If you are not planning on using it right away you can put it in the fridge to chill.
  6. Serve cold.
