Easy Cauliflower Recipes​

For the past couple of weeks, I have been trying to follow the Keto Diet to get back in shape for the warmer weather. I am going to share some of my own Cauliflower recipes I have been following on this diet. All of them are vegetarian and can easily be made vegan by substituting to vegan cheese.

1. Cheesy Cauliflower Rice

In a non-stick pan, heat 2 tablespoons of olive oil, 1/2 teaspoon of chopped garlic, 1/2 bag of the Cauliflower and Broccoli blend from Trader Joe’s, a handful of broccoli florets and cook for 3-4 mins. I topped it off with some Himalayan salt, black pepper, and fresh parmesan cheese.

2. Cauliflower Gnoochi

In a non-stick, heat the Cauliflower Gnoochi from Trader Joe’s as instructed on the package. Once cooked, add some chopped green papers, pasta sauce, and cheese of your choice. Cover and cook on slow heat for 2-3 mins or until cheese melts. I added garlic salt and black pepper for taste.

3. Cauliflower Crust Pizza (Frozen)

Costco’s frozen Cauliflower Crust Roasted Vegetable Pizza tastes just like regular pizza when you eat it hot. Follow cooking instructions on the package. You can add more toppings of your choice, I added spinach.

4. Pineapple Cauliflower Fried Rice

In a non-stick pan, heat 2 tablespoons of olive oil, 1/2 teaspoon of grated garlic, 1/2 bag of the Cauliflower and Broccoli blend from Trader Joe’s, handful of frozen pineapple chunks and cook for 3-4 mins. Add soy sauce and Sriracha hot sauce to taste.

5. Mashed Cauliflower

I paired Trader Joe’s Mashed Cauliflower with Vegan Chick’n tenders and boiled asparagus. Follow cooking instructions on the mashed cauliflower package.
