Kulcha Chole

Kulcha Chole is an Indian street food. “Chole” is the filling and “Kulcha” is the bread. My version is the Punjabi (North Indian) version of the same dish with potatoes added to it. This is a quick and easy recipe to use as a snack or as a meal and completely vegetarian.

I am using freshly baked sandwich buns in place of the Kulcha. If you can get your hands on the kulcha bread I would recommend that. You can also use different types of sandwich buns. I have used freshly baked onion rolls as well.

Prep and Cook Time: 20 Mins

Ingredients:

  • 1 Can Organic Chick Peas, drained
  • 1 Potato, boiled and cut into pieces
  • 1 Small Tomato, chopped
  • ¾ Onion, chopped
  • 3 Green Chillies, chopped
  • 2 Tbsp Lemon Juice
  • ¾ Tsp Red Chilli Powder (or to taste)
  • 1 Tsp Chaat Masala
  • ½ Tsp Cumin Powder
  • ¼ Tsp Garam Masala
  • 1 Tbsp Cilantro, chopped
  • Salt to taste
  • Water as required
  • Oil (I use coconut oil spray)
  • 6 Sandwich Buns
  • Imli Chatni (optional)
  • Mint Chatni (optional)

Step 1: Prepare

  • Keep a little bit of onion, tomato and cilantro aside.
  • In a bowl, add chickpeas, potato, onion, tomato, green chilis, lemon juice, red chili powder, chaat masala, garam masala, cumin powder, cilantro, salt to taste and mix well. Then mash it a bit.

Step 2:  Cook

  • In a non-stick pan, on medium heat, add the mixed “chole” mixture and add a little water to bind all the mixture together. Cook for about 3-4 minutes or until all the water is gone.
  • Top off the cooked mixture with the onion, tomato, and cilantro we had set aside.
  • On medium heat, spray another non-stick pan and toast the sandwich bun on both sides.
    • Repeat for all 6 buns.
  • Now, with a knife, slit the bun from the side to make a pocket.
    • Optional: Add 1 tsp each of imli and mint chiti in the sliced bun.
  • Fill the buns with the chole mixture.
